The Negroni is non-negotiable in a bar, so we gave it a festive lift rather than a reinvention. The marriage of 58 & CO London Dry Gin, the deep, herbal warmth of Cocchi Vermouth and aromatic bitterness of 58 & CO Red Bitter remain at the heart of it, joined by a measure of Pimento Dram for soft notes of cinnamon, clove and nutmeg. Pour over ice, add a twist of orange, and savour slowly. The perfect aperitivo to start an evening around the tree - old traditions, new ones, and everything in between.
